Potato Candy

Dad spent his first 10 years on a farm in Olpe, Kansas, population: about a handful. He says a farm is the best place a kid can grow up and has always talked about his childhood there - kick the can, a horse named Champ, new piglets. But most of all, Dad talked about food. His arteries are as hard as lead pipes nowadays, but he loved country cooking and often mentioned potato candy as I was growing up.


I thought I'd make a batch for his 70th birthday, so I wrote to a magazine requesting what I thought was an extinct recipe. For the last two years, I've been receiving letters nearly every month from people with their own versions and histories. I love, love, love these letters. They usually come written in shaky script and addressed simply to me and my town - no street address. It's made me feel so connected and grateful to those people who can make something sweet from a dab of leftover potatoes.
